Homemade Coconut Oil Chocolate | The Macadames - 09

I must admit, I was a late starter on chocolate.  I know, don’t stop trusting me because of that.  I am not some kind of alien – I have always just preferred savoury treats over sweet, brie over Tim-Tams, chips over skittles.  I do feel however in the last few years, chocolate has really made its way up to becoming one of my favourites in the snack department.  I am quite partial dark chocolate especially, or anything with “bits” in it.  When Cadbury released their Marvellous Creations, I was in heaven!  Being on this little health kick, I thought I would aim to re-create what I love about chocolate, without the dairy and refined sugar.

This recipe is dead easy, coconut oil, cacao and a sweetener, I have used Agave, however stevia, honey or maple syrup are all acceptable.  I then experimented with some added flavours but the limit is your imagination on this one!

Coconut oil is a marvellous creation in it’s own right – according to nutritionist Bruce Fife, author of “The Coconut Oil Miracle”, it will boost your metabolism and help you burn calories at a higher rate.  Miranda Kerr swears by the stuff, using it on her skin, her hair, her teeth and in smoothies and salads.  What’s that you say? This chocolate will make me lose weight and get a body like Miranda Kerr’s?! Well I wouldn’t count on it, but you can definitely rely on it as a relatively guilt free treat when you are craving something sweet.

What you need:

  • Bowl
  • Containers or moulds
  • Baking paper

Ingredients:

  • Equal portions of coconut oil and cacao powder (Depending on how much you want to make!)
  • Sweetener of choice (To taste)
  • Pinch of salt
  • Fillings of choice (I used blueberries, peanuts, shredded coconut and banana

Method:

1. If coconut oil is solid, melt to liquid

2. Mix coconut oil and cacao in bowl

3. Add sweetener and salt to taste

4. Line container with baking paper (if using a mould, disregard)

5. Pour mixture into container

6. Add your toppings into the mixture and stir through

7. Place in freezer until set

8. Remove baking paper.

Storage: Due to the nature of coconut oil, this will need to remain stored in the freezer.
