Spring has arrived!!!

The weather is warming, the sun is out and i’m finally able to wear open toed shoes without losing my toes to frostbite. Well not quite, but it doesn’t stop me from trying.

What i’ve missed most about the warm weather is my tan and feeling like eating salads. When it’s cold and gloomy the LAST thing I feel like doing is choking down a cold salad. Craving nothing but creamy pastas and loaded burgers, it makes healthy eating more challenging.

I just got home after a week in Fiji which was sublime. We spent most days lazing by the pool, sharing long lunches and spending quality time with family. It was the perfect R&R and just what I needed after spending the past few months feeling pretty awful with morning sickness. I came back recharged and refreshed, ready to make up for my recent poor eating habits with some serious wholesome food.

I woke up  my first day back with a craving for strawberries so decided to make a fresh salad using ripe strawberries, mixed greens (I wanted watercress but my farmers market had run out) fresh ricotta, hazelnuts, mint and a drizzle of balsamic glaze.

It really is a simple meal to throw together and perfect on its own or to serve as a side. My hubby doesn’t consider salad a meal so I served ours with rare lamb cutlets & some crusty bread and butter. He was one happy chappy!

What you need:

  • Large mixing bowl

Ingredients (serves 2 for lunch, 4 for sides):

  • 2 punnets of fresh ripe strawberries, quartered
  • 2 cups watercress (or your favourite mixed greens)
  • 1/3 cup hazelnuts, roughly chopped
  • 1/2 cup full fat ricotta cheese
  • Balsamic glaze to taste, I love this one

Method:

1. Toss the strawberries, watercress and hazelnuts in a large mixing bowl.

2. Divide salad among plates and top with the ricotta.

3. Drizzle with balsamic glaze and eat immediately with a side of crusty bread.

 

Storage: in an airtight container (without the glaze) for up to 2 days.
