Does the idea of cold porridge sound rank to you?

I agree, but let me tell you why you’re (we’re) wrong. Cold porridge, is every bit as delicious as its warm counterpart, and can be enjoyed in the dead of Summer. It’s basically like custard but slightly more chunky.

The porridge in this recipe is ultra vanilla-ey + creamy. The ultimate base for the chai poached pears. Poached pears are a perfect breakfast addition to any porridge, muesli or bircher. If you don’t like chai, feel free to mix it up with any spices or tea you enjoy. Chamomile would also be lovely.

Ingredients (serves 4):

  • 3 pears, peeled
  • 3 teaspoons chai tea mix
  • 2 teaspoons sugar
  • 2 cups (180g) rolled oats
  • 3 cups (750ml) milk
  • 300ml pure (thin) cream,
  • 1 vanilla bean, split, seeds scraped
  • To serve: maple syrup, double cream (optional)

 

Method:

1. To make the poached pears: fill a medium saucepan with water and bring to the boil. Add the pears, tea and sugar and simmer for 15 minutes. Then take off the heat to steep for 15 minutes.

2. To make the porridge: Place oats, milk, cream and vanilla pod and seeds in a saucepan over medium-low heat for 10-15 minutes, stirring frequently, until oats are tender and the mixture is thick and creamy (you can add a little more milk / water if becoming too thick).

3. Divide the porridge among four bowls, top with pear halves, drizzle with maple syrup and serve. A side of double cream would work perfectly.

 

Storage: pears will keep in an airtight container in the fridge for up to 5 days.
