Recipe for Pork & Red Wine Rigatoni Bake by Anisa Sabet. 

Ingredients (serves 4):

For the pasta sauce: 

  • 1 brown onion, finely chopped
  • 2 teaspoons minced garlic
  • 500ml red wine
  • 400g  pork sausages, skin removed
  • 1 jar pre-made pasta sauce (I use Dolmio Spicy peppers) – substitute: 1 400g tinned diced tomatoes
  • 1 400g tinned diced tomatoes
  • 4-5 oregano sprigs
  • Rind from 1 lemon
  • Sea salt, pepper & sugar

 

For the bake: 

  • 500g dried rigatoni
  • Parmesan
  • For garnish: fresh oregano, parmesan

 

Method:

1. Preheat oven to 180°C.

2. In a deep frypan, sauté the onion until softened. Add the minced garlic and cook until brown. Add the sausage mince and cook until browned. Pour in the wine and wait until reduced by half then add the pasta sauce and tinned tomatoes. Toss through fresh oregano sprigs and lemon rind. Simmer covered for 1 hour then uncovered for 15 minutes until thickened. Season with sea salt, pepper and sugar.

3. In a large saucepan, cook the pasta until al-dente. Then toss through the sauce and pour into a deep baking dish. Sprinkle over the parmesan and pop into the oven to bake for 30 minutes.
