Recipe for Avocado Chilled Soup With Lime, Mint & Creme Fraiche Fraiche by Anisa Sabet. 

Ingredients (serves 4):

  • 4 avocados
  • 3 cups water (or stock if you prefer a saltier soup)
  • Handful fresh mint leaves (around 7-10 leaves)
  • 1/4 cup fresh lime juice
  • To serve: Olive oil, creme fraiche, sea salt & pepper, red wine vinegar to taste

Method:

1. In the Magimix, using the food processor function, on speed 13, blend all the ingredients until creamy and smooth.

2. To serve, pour out the soup into bowls, drizzle with olive oil, a good dollop of creme fraiche, sea salt & pepper and red wine vinegar to taste.
