My favourite side to any summer bbq, chargrilled corn, with sour cream, smoked paprika, coriander and lashings of parmesan.
Recipe for Buttery Corn with Sour Cream, Smoked Paprika, Coriander by Anisa Sabet.
1. To cook the corn: boil corn for 2 minutes in a pot of boiling water, then chargrill sides using a gas stove. Or alternatively, cook till charred on a bbq.
2. Cut kernels off the cob, toss in a bowl with salted butter (a fair bit of it). Season well with sea salt & paprika.
3. To serve: serve with a dollop of sour cream, fresh coriander and a generous lashing of parmesan.
