Half Roasted Pumpkin with Herb Oil, Chèvre & Toasted Pepitas

A superbly easy half roasted pumpkin, topped with herb oil, toasted pepitas & chèvre.

Ingredients (serves 2):

  • 2 x half pumpkins (butternut works well, but you can use any)
  • 1/2 cup pepitas, toasted
  • 100g chèvre

For the herb oil: 

  • Handful of thyme, rosemary, mint, sage (whatever green herbs you have), finely chopped – or just whizz up to save yourself time
  • 1.2 cup olive oil
  • 1 garlic clove
  • Splash red wine vinegar (tiny bit)
  • Sea salt
  • Pinch white pepper

Method:

1. Preheat oven to 200°C.

2. To make the herb oil: Mix ingredients in a bowl, or gently whizz in food processor.

3. Scoop out the centres of the pumpkin, then score diagonally. Try not to cut through the skin though.

3. Rub generously with herb oil, season with more sea salt & pop into the oven to bake for 1 hour or until softened.

5. Serve immediately topped with chèvre and toasted pepitas.
